Huckleberry Birthday Reflections
I celebrated had a birthday over the weekend. It was a rough one. When you hit the age where they stop writing songs about you… oh maybe I’m not ready to talk about this yet; though I’d love to hear some advice, suggestions, warnings, experiences and stories. Remember, I’m a realist – not interested in marshmallows, unless they’re for s’mores.

Huckleberry Rides: Oh Golly, Raleigh!
Tom & I have been looking for a nice pair of new bicycles for a while, as it has been a goal of ours to cruise around the city and attempt to be at least moderately active amidst our busy work schedules. He is a bike guy, and I am not to say the least – so I put all of my trust and faith in his research and selection of the right kind of bike for me (because honestly, I had no clue about the materials, components, etc). My only requests were: can we find ones that are at once easy to ride AND cute?!
So he found her: the gem, savior and advocate for the moderate activity I aspire to have (e.g. the following 15-minute break taken to ride around the Financial District when I’m spending a sunny Sunday in front of excel sheets at the office)
My (new-to-me) mint-condition 1971 Raleigh Superbe! With all of its original components, down to the perfectly-aged chocolately-brown Brooks saddle, oh golly was she easy to ride AND cute.

Mexico September 2013
Tom, Trigger & I just got back from 10 days in the Yucatan – a much needed break from everyday/work/hustle/grind-life. Check out some photo-highlights below. Swimming in the wild with whale sharks was undoubtedly one of the top 3 coolest things we both have ever done in our lives – I’d highly recommend it!

Coral Floral Reiss Piece
I’m a sucker for everything Reiss, and this is one of my favorite dresses of theirs of all time. It entered my life as a MOH dress for my bestie Cat’s wedding and always makes me feel ladylike and lovely when I zip it up. Doesn’t it remind you of a flipped over coral colored peony? 🙂

HuckleberryEats: Apple Beet Soup in Roasted Acorn Squash Bowl + Polenta Fries
Feeling a bit mid-week-ambitious, I really wanted to make a scrumptious healthy dinner I’d never made before (and, oh boy, did I pay the price burning my hand while cooking this delicious meal).
I love fruits & vegetables and based this meal off of a couple of my all time favorites: apples, beets, acorn squash, and GARLIC. As a result, I made a sweet and spicy pureed apple beet soup, which I served in a roasted garlic acorn squash bowl (with a side of crispy polenta fries!)
OH, DID YOU WANT TO COME OVER FOR DINNER?…okay!

SQUASH & SOUP
First: Cut your acorn squash in half & remove the guts.
Then: Roast your acorn squash with some olive oil and garlic ( I also sprinkled some of my favorite seasonings: salt, pepper, cayenne) on a lower rack at 350 degrees while you prepare the rest of the meal.
Then: In a medium pan, sautée some diced shallots (2) until softened then add your peeled & chopped beets (4 large) and apples (1) – let this cook down for about 5 solid minutes.
Then: Add some salt to taste, about 1 teaspoon of cayenne pepper, and a couple cloves of garlic.
Then: Blend the soup with an immersion blender (food processor or traditional blender)
Prepare your chevre (goat cheese) basil balls by rolling your fresh chevre in finely minced basil.
Finally, remove your perfect roasted squash/garlic from the oven & loosen up some of the squash flesh before adding a ladle full of soup and a basil-chevre ball.
POLENTA FRIES
First, prepare your favorite creamy polenta recipe!
Then, pour the creamy polenta into a parchment lined pan & refrigerate (for about 1 hour).
Then, cut the solidified polenta into fries (that should look around the size of the french toast sticks once served in elementary school cafeterias [mine at least!])
Heat up a pan with some oil & fry each side of the polenta fries until crispy golden brown
ENJOY!

Nap(a) Time
I enjoyed a lovely weekend in Napa recently (having stayed at an adorable cottage Tom found on AirBnB). HIGHLIGHTS: (i) Joined one too many “wine clubs”; though, these are likely the only clubs I’m currently interested in joining at this point in my life. (ii) Took a nap in a (wine) cave – batwoman style. (iii) Frolicked with semi-wild kittens through a private vineyard (iv) Toured Cakebread Cellars (again!)
